A Delightful Description

When it comes to French cheeses, the Soumaintrain cheese is nothing short of a gastronomic delight. This semi-soft cheese, hailing from the Burgundy region, boasts an exquisite washed-rind, copper-colored surface with a distinct creamy interior. Its texture is smooth and supple, perfectly capturing the essence of traditional French cheesemaking. The flavor profile of Soumaintrain is rich and full-bodied with a slightly pungent aroma that hints at its aging process. This cheese offers a delicate balance of tanginess and mild sweetness, leaving a lingering taste on the palate that is nothing short of mesmerizing.

A Journey Through Time

The origins of Soumaintrain cheese can be traced back to the 17th century, thriving in the heart of Burgundy in France. It is believed that the monks at the Abbey of Pontigny were among the first to craft this cheese, using techniques that have been refined over generations. For years, farmers continued to produce Soumaintrain using traditional methods, allowing it to mature in humid cellars to develop its unique characteristics. Although it significantly dwindled during the 20th century, efforts have been made to revive its production, making it a cherished local specialty with a protected geographical indication (PGI) in recent years.

Tips for Tasting

Indulging in a slice of Soumaintrain is akin to savoring a piece of Burgundy itself. To truly appreciate its nuances, I recommend serving it at room temperature, allowing the flavors to unfurl. Pair it with a crusty baguette or some whole-grain bread, where the cheese’s lusciousness can meld with the bread’s firm texture. Adding a dollop of traditional Dijon mustard or a handful of grapes on the side enhances the tasting experience, as these accompaniments emphasize Soumaintrain’s creamy and savory notes.

A Wine to Remember

Pairing wine with cheese is an art form, and for Soumaintrain, a classic white Burgundy—such as a Pouilly-Fuissé or a Chablis—works wonders. These wines complement the cheese’s subtle earthiness while accentuating its rich buttery flavor. The wine’s crisp, mineral undertones create a harmony that dances on your taste buds, bringing out the best in both the cheese and the wine.

Preparation:

1. Potato preparation

Peel and rinse the potatoes. Slice them into very thin rounds using a mandoline (approx. 2 mm thick).

Keep them in a damp cloth to prevent browning.

2. Infused Comté cream

In a saucepan, gently heat the cream, milk, crushed garlic, a pinch of nutmeg, salt, and white pepper.

Remove from heat. Stir in the egg yolks and 300 g of grated Comté cheese until fully melted and smooth.

Carefully unmold each hot gratin onto a preheated fine porcelain plate.

Using a truffle slicer, shave fine slivers of fresh black truffle over the top.

Optional: Add a single drop of white truffle oil on the plate for extra aroma.

Serve immediately, accompanied by a glass of aged Jura vin jaune or a rich, oaked Chardonnay.

Chef’s Tip:

For an even creamier texture and deeper flavor, the gratins can be prepared the day before, then gently reheated at 120°C (250°F) before plating. The truffle essence will infuse more fully through the cheese and cream.

Hailing from the quaint village of Graval in Seine-Maritime, this artisanal cheese is crafted by the dedicated farmers of EARL La Vallée Haute. Made from raw cow’s milk, Graval boasts a double-cream, soft-ripened texture with a natural bloomy rind. It’s reminiscent of Neufchâtel but offers a milder, less salty profile that melts effortlessly on the palate.

A Flavor Profile to Savor

From the first bite, Graval enchants with its buttery richness and subtle tang. Its creamy consistency spreads like a dream, making it a versatile companion for both sweet and savory pairings.
To complement Graval’s luscious texture and nuanced flavors, consider these pairings:

Wine: A crisp Chardonnay or a light Pinot Noir enhances its creamy notes without overpowering them.

Accompaniments: Fresh pear slices, toasted walnuts, or a drizzle of honey accentuate its delicate sweetness.

Serving Suggestions

Graval shines on a rustic cheese board, nestled among a selection of charcuterie, olives, and artisanal breads. Its approachable flavor also makes it an excellent choice for gourmet sandwiches or melted into a velvety sauce over pasta.

Why Graval Deserves Your Attention

Embarking on a culinary journey through France, I found myself irresistibly drawn to the heart of Normandy, where the illustrious Pont-l’Évêque cheese has been crafted for centuries. This square-shaped delicacy, with its creamy texture and aromatic presence, offers a taste that is both rich in history and flavor.

A Glimpse into History

<img fetchpriority="high" alt="" class="wp-image-3616 lws-optimize-lazyload"/ width="800" height="500" data-src="https://frenchipie.com/wp-content/uploads/2025/03/pont-leveque-ville.png" srcset="https://frenchipie.com/wp-content/uploads/2025/03/pont-leveque-ville.png 800w, https://frenchipie.com/wp-content/uploads/2025/03/pont-leveque-ville-300x188.png 300w, https://frenchipie.com/wp-content/uploads/2025/03/pont-leveque-ville-768x480.png 768w" sizes="(max-width: 800px) 100vw, 800px" />
PONT L’EVEQUE OLD CITY

Pont-l’Évêque’s origins trace back to the 12th century, making it one of France’s oldest cheeses. Legend has it that Cistercian monks in Normandy first crafted this cheese, initially known as “angelot.” By the 17th century, it adopted the name of the village where it was predominantly produced. This cheese has since become a staple in French gastronomy, celebrated for its enduring quality and distinctive character.

Tasting Notes

Unwrapping a piece of Pont-l’Évêque reveals a washed rind with a light yellow-orange hue, emitting a robust aroma reminiscent of hay and a barnyard—traits characteristic of its traditional aging process. Despite its pungent scent, the flavor is surprisingly mild and creamy, offering subtle notes of butter and hazelnut. The texture is soft yet firm, providing a delightful mouthfeel that lingers pleasantly on the palate.

Culinary Pairings

This versatile cheese pairs wonderfully with a variety of accompaniments. Enjoy it with crusty baguette slices or incorporate it into a cheese platter alongside fruits like apples and pears. For a traditional Normandy experience, savor Pont-l’Évêque with a glass of local cider or Calvados, an apple brandy that complements the cheese’s creamy richness. Alternatively, a light red wine such as Pinot Noir can enhance its delicate flavors without overwhelming them.

A Personal Invitation

If you haven’t yet experienced the charm of Pont-l’Évêque, I encourage you to seek it out. Each bite offers a journey into Normandy’s pastoral landscapes and centuries-old cheesemaking traditions. Whether you’re a seasoned cheese aficionado or a curious newcomer, Pont-l’Évêque promises a tasting experience that is both authentic and memorable.

In exploring this cheese, I found not just a food item, but a connection to the rich tapestry of French culture and history. It’s a testament to the enduring appeal of artisanal craftsmanship and the simple pleasures of life. So, indulge in a piece of Pont-l’Évêque, and let it transport you to the idyllic countryside of Normandy.

As a cheese lover, I find immense pleasure in exploring the diverse flavors and textures that different cheeses have to offer. One cheese that has truly captured my heart is the Sire de Créquy, a French gem that’s both unique and utterly delightful. Allow me to take you on a journey through this remarkable cheese, from its origins to its exquisite taste.

A Flavorful Heritage

The Sire de Créquy hails from the Pas-de-Calais region of France, where it has been crafted with passion and precision since the Middle Ages. Originating from the rich soils of northern France, this cheese is made from cow’s milk, which gives it a creamy texture and a delightful taste profile. Each wheel of Sire de Créquy is a celebration of tradition, representing generations of cheesemaking expertise.

The Texture and Taste Profile

What sets Sire de Créquy apart is its semi-soft texture and the natural rind that encases it. When you first slice into a wheel, you’re greeted with a smooth, ivory-colored interior that practically melts in your mouth.

The flavor is both subtle and complex. Initially, you may taste mild, buttery notes that gradually give way to richer, earthy undertones. The finish is pleasantly nutty, leaving a lingering warmth that invites you to take another bite. Whether enjoyed on its own or paired with accompaniments, Sire de Créquy is truly enchanting.

Perfect Pairings

To elevate your cheese experience, I highly recommend pairing Sire de Créquy with a glass of Chardonnay. The bright acidity and fruity notes of the wine beautifully complement the cheese, highlighting its rich flavors without overwhelming them. This pairing transforms an ordinary cheese tasting into an extraordinary culinary adventure.

A Versatile Delight

Sire de Créquy isn’t just a cheese for the cheese board—its versatility makes it an excellent choice for a variety of dishes. Consider grating it over a warm pasta dish, allowing it to melt and meld into the other flavors, or use it in a decadent cheese sauce for a gourmet twist. Even a simple salad can be elevated with a few slices of Sire de Créquy, providing a delightful contrast to fresh greens.

As a cheese enthusiast, I always find joy in exploring unique flavors, and one cheese that has truly captured my heart is the Crémet du Cap Blanc Nez. This creamy delight hails from the picturesque region of Normandy in France and is a testament to the rich dairy tradition of the area. If you’re looking for a cheese that tantalizes the taste buds and evokes a sense of adventure, let me take you on a journey through the flavors of Crémet du Cap Blanc Nez!

The Cloud-Like Texture of Crémet

<img alt="" class="wp-image-3399 lws-optimize-lazyload"/ width="1024" height="576" data-src="https://frenchipie.com/wp-content/uploads/2025/02/cap-blanc-nez-1024x576.jpg" srcset="https://frenchipie.com/wp-content/uploads/2025/02/cap-blanc-nez-1024x576.jpg 1024w, https://frenchipie.com/wp-content/uploads/2025/02/cap-blanc-nez-300x169.jpg 300w, https://frenchipie.com/wp-content/uploads/2025/02/cap-blanc-nez-768x432.jpg 768w, https://frenchipie.com/wp-content/uploads/2025/02/cap-blanc-nez.jpg 1152w" sizes="(max-width: 1024px) 100vw, 1024px" />

What can I say about the texture of Crémet du Cap Blanc Nez? It’s like sinking into a cloud of creaminess! This cheese is a delicate blend of cow’s milk, cream, and a hint of lactic fermentation, giving it an incredibly smooth and buttery mouthfeel. Each bite melts in your mouth, leaving you longing for more. It’s the kind of cheese that makes every cheese board feel like a celebration.

A Symphony of Flavors in Every Bite

When it comes to flavor, the Crémet du Cap Blanc Nez is wonderfully complex. At first, you are greeted with a tantalizing freshness that reminds you of spring mornings in a lush pasture. As you savor it, notes of sweet cream and light tanginess come into play, balanced by subtle hints of wildflowers. This cheese is soft yet has a character that is wholly its own, making each bite a delightful surprise.

My Go-To Wine with Crémet

One of the most exciting aspects of enjoying cheese is finding the perfect wine to accompany it. For Crémet du Cap Blanc Nez, I highly recommend pairing it with a glass of Chardonnay. This wine, especially if it has been aged in oak, complements the rich creaminess of the cheese beautifully, enhancing its flavors without overpowering them. The buttery notes of the Chardonnay harmonize with the cheese, creating a luxurious tasting experience that is truly unforgettable.

Creative Ways I Use Crémet in My Cooking

Incorporating Crémet du Cap Blanc Nez into your meals can elevate your culinary experiences. Spread it generously on a fresh baguette, drizzle with a touch of honey, and you’ll have a simple yet extraordinary appetizer. You can also use it in your favorite savory dishes, adding a creamy depth to risottos or as a luxurious topping for baked potatoes. Let your imagination run wild!

. I encourage you to seek out this hidden treasure from Normandy and savor every creamy bite. Cheers!

An Unexpected Delight

During my travels through the picturesque region of Charente-Maritime in France, I stumbled upon a local delicacy that left a lasting impression: jonchée. This traditional fresh cheese, with roots tracing back to the Middle Ages, is a testament to the region’s rich culinary heritage.

First Impressions

Jonchée is crafted from cow’s, sheep’s, or goat’s milk, and its presentation is as unique as its flavor. The curd is carefully wrapped in woven rush leaves, known as “joncs,” which not only lend the cheese its name but also impart a subtle, herbaceous aroma. This method has been preserved by local artisans, resulting in a smooth and delicate texture that melts in the mouth.

The Tasting Experience

<img alt="" class="wp-image-3385 lws-optimize-lazyload"/ width="300" height="225" data-src="https://frenchipie.com/wp-content/uploads/2025/02/jonchee-300x225.png" srcset="https://frenchipie.com/wp-content/uploads/2025/02/jonchee-300x225.png 300w, https://frenchipie.com/wp-content/uploads/2025/02/jonchee-768x576.png 768w, https://frenchipie.com/wp-content/uploads/2025/02/jonchee.png 772w" sizes="(max-width: 300px) 100vw, 300px" />

Eager to indulge, I tasted the jonchée fresh, as it’s traditionally enjoyed on the day of its creation. Its mild flavor was complemented by a hint of sweetness when drizzled with local honey, though some locals recommended a splash of Pineau des Charentes or Cognac for an indulgent twist. The versatility of jonchée also shines in savory pairings; I savored it alongside smoked fish, enhanced with fresh herbs and a dash of olive oil.

Preserving Tradition

Despite its declining production, jonchée remains a cherished gem in Charente-Maritime’s gastronomic landscape. Its authentic simplicity and refreshing taste encapsulate the essence of the region’s culinary traditions.

For a deeper insight into the traditional crafting of jonchée and its storied history, I recommend watching this informative video:

Nestled in the sun-kissed landscapes of Languedoc and Midi-Pyrénées, Pérail emerges as a hidden treasure of French cheesemaking. Crafted from the rich, creamy milk of grass-fed sheep, this artisanal cheese is a love letter to tradition and terroir. Imagine a delicate disc, its rind dusted with a whisper of white mold, cradling a heart so tender it practically melts at the touch. Péraill is more than a cheese—it’s an experience, a fleeting moment of indulgence that captures the soul of rural France.

A Symphony of Texture and Flavor

Young Pérail hums with subtlety: mild, buttery, and slightly tangy, its ivory paste yielding like a cloud. But wait. Let it age just a few days longer, and magic unfolds. The texture deepens into a luxuriously creamy embrace, while flavors bloom into rustic notes of toasted hazelnuts, sweet hay, and a whisper of wild herbs. Its aroma? A breezy sigh of fresh meadows after rain, laced with a hint of animal warmth that beckons the senses.

Serve with Soul

To know Pérail is to savor it at its peak. Let it breathe at room temperature, then slice into its supple heart. Drizzle with lavender honey for a kiss of sweetness, pair with ripe figs or a crusty baguette, or simply let it shine alone on a slate board beside sun-ripened grapes. Tradition whispers that true enthusiasts eat it with a spoon—straight from its rustic wooden box—as the French shepherds once did.

Wine Pairing: A Dance of Harmony

Elevate your Péraill moment with a glass of Monbazillac, a golden nectar from nearby Dordogne. Its honeyed apricot notes and vibrant acidity cut through the cheese’s creaminess, creating a melody of sweet and savory. For a bolder choice, pour a glass of Corbières Rouge—its earthy, peppery depths mirror Pérail’s pastoral charm.

Péraill is ephemeral, a cheese that demands to be cherished before its fleeting ripeness fades. Share it under a twilight sky, its creamy allure sparking laughter and connection. This is more than a dairy delight—it’s a passport to the soul of Southern France, one silken bite at a time.
